Learn to make your own pasta, with a flare for fall! In this class, students will master basic egg pasta, and learn a seasonal squash sauce to complement it. Students are welcome to cook along with the online demo so they can enjoy a homemade Friday night meal after class! Please have the supplies listed below available to follow along with class.
Please note: Students will need to roast their squash before class begins. To roast your squash, cut the squash in half and de-seed it. Completely rub each half in oil and sprinkle with salt. Lay the squash face down on a baking sheet with edges and add two cups of water to the pan. Bake in a 425 degree oven until soft to the touch (or with a fork), about 45 minutes.
- 2 c. white all-purpose or 00 flour
- 4 large eggs
- kosher salt
- 1 butternut squash (or your favorite variety), roasted
- 1 pint heavy whipping cream
- fresh sage leaves
- ground nutmeg (or grate your own)
- large mixing bowl
- kitchen scale or measuring cups
- large cutting board
- rolling pin
- knife or bench scraper
- plastic wrap or damp cloth
- large pot for boiling
- large saucepan
This class is appropriate for ages 14+.

About the teacher:
Christin Ortiz has been working in restaurants since she was 19. Starting in the front of the house, she realized early on she preferred the back of the house. Having worked in different kitchens, she is most proficient in Italian and Hispanic cuisine. Most recently Christin ran the food program at Joe Bean Roastery, where she focused the menu on her Latin-American heritage. She loves sharing her passion for food, and wants everyone to be able to cook the food they crave!
