Ribollita and Garlic Bread Casserole

This casserole is a tasty way to use the last vegetables in your summer garden! Combine eggplant, zucchini, peppers, onions and herbs into a tasty ribollita (AKA stew), which is then poured over a layer of toasted garlic bread and baked. Finishing touch is a broiled layer of cheese. Molto bene!

Ingredients for ribollita:
- 1 medium eggplant
- 2 medium zucchini
- 1 red bell pepper
- 1 cubanelle pepper
- 1 yellow or red onion
- 4 cloves of garlic
- 1 can of diced tomatoes (14.5 ounces)
- ½ cup white wine
- 2 cups shredded fontina cheese
- 1 tbs. chopped fresh thyme
- a few fresh basil leaves
- salt
- pepper
- olive oil

Optional: meat of choice can be added (sausage, ground beef, ground turkey)

Ingredients for garlic bread:
- ¼ pound ciabatta bread
- 5 tbs. butter (divided)
- 3 cloves of garlic, chopped
- 1 ½ cups grated parmesan cheese
- handful of flat leaf parsley, chopped

Equipment needed:
- 9x13 baking dish
- vegetable knife
- strainer
- large dutch oven or heavy, large saucepan
- wooden spoon
- small saucepan
- baking sheet pan
- bread knife
- brush for basting
- oven and broiler

This class is appropriate for all ages, although anyone under the age of 16 should be supervised by an adult.

About the teacher:
MaryAnne was a classroom teacher for 34 years and she has put her teaching skills together with her love of cooking Italian (her heritage) food. She has taught a monthly Italian cooking class for 10 years, as well as in-home cooking classes. MaryAnne has also appeared on the Food Network! Her skills and recipes have been passed down to her from her Nonna and she has also taken private cooking classes in Sorrento, Florence and Siena.
