French Pastry Apple Crisp

As October arrives and the brilliant sunshine is still with us, there is no better time to venture to your favorite local orchard and pick apples! This class will teach you how to take those apples and bake a delicious apple crisp, complete with a homemade French pastry crust.

Ingredients needed:
- 6 ¼ cups flour
- 1 ⅛ cup + ½ cup sugar
- ¼ cup brown sugar
- 1 lb. + 1 stick butter
- 2 Eggs
- 6 to 8 tart apples
- 1 ¼ cups rolled oats
- 2 - 3 tbsp. lemon juice 
- ¾ tsp. cinnamon
- Optional: ½ cup chopped nuts (walnuts are recommended)

Equipment needed:
- Tart pan square 8 × 8 (Baking dish square or round is perfect, too)
- Measuring cups and spoons
- Sharp knife + fork
- Spoon for mixing
- 2 medium mixing bowls
- Optional: Stand mixer

This class is appropriate for ages 14+

About the teacher:
Bobbie Gluck's love for baking was inspired originally by a Greek bakeshop in her hometown of Plattsburgh. She traveled Europe as a young woman, studying in Salamanca, Spain, exploring the flavors of bakeries in Spain, France, Italy, and more.  She baked professionally for twenty five years in a small town bakery. Bobbie now enjoys raising her children, flower farming, baking for pleasure for family and friends, and spending time in creative pursuits at her farmhouse on the westside of Rochester.
