Easter Cheese Pie

Easter cheese pie is an Italian dessert always on the table for Easter dinner. The filling creates a rich dessert to enjoy after the 40 days of Lent when sweets were not allowed in the early days of the Catholic Church. There are variations of this pie across the regions of Italy. All variations include ricotta cheese and sometimes mascarpone.  Some may have rice or fruit and it is always made in a pastry crust. Students are invited to cook along with the instructor's demonstration.

Ingredients Needed:
- 2 ½ c. flour
- ½ c. and 3 Tbsp. sugar
- 1 tsp. baking powder
- 3 large eggs
- ½ c. shortening, melted
- 2 tsp. vanilla
- 1 Ib. whole milk ricotta cheese
- dash of salt
- lemon and orange zest
- 2 c. cooked white rice
- 3-6 Tbsp. whole milk

Equipment Needed:
- 9" pie pan
- plastic wrap
- flour for rolling
- rolling pin
- large mixing bowl
- small saucepan for melting shortening
- zester
- measuring spoons and cups

This class is appropriate for all ages, although anyone under the age of 16 should be supervised by an adult.

About the teacher:
MaryAnne Quatrano-Holleran was a classroom teacher for 34 years and she has put her teaching skills together with her love of cooking Italian (her heritage) food. She has taught a monthly Italian cooking class for 10 years, as well as in-home cooking classes. MaryAnne has also appeared on the Food Network! Her skills and recipes have been passed down to her from her Nonna and she has also taken private cooking classes in Sorrento, Florence and Siena.
