One of the hallmarks of early spring is the abundance of beautiful, vibrant citrus. Fermentation, the act of preserving a food using bacteria, enzymes or fungus, gives us the ability to capture that vibrance to be enjoyed later. In this class you will learn how to make two citrus ferments, preserved lemons that are popular in North African cuisine and a citrus kosho, a Japanese condiment. You will also learn how you can use both ferments to make any dish pop. Each class member will leave with their own jar of preserved lemons.  

Please note: This class will include gluten and soy ingredients. Students will be standing for most of the class.

The recommended age for this class is 16+. Anyone under the age of 18 will need an adult present. 

This class will take place at Eat Me Ice Cream located inside The Hungerford Building at 1115 East Main St. Suite 148. Please enter through Door 1.

About the teacher:
Ali Lawrence is the founder and owner of Spirit and Abundance, a company that seeks to help people connect and cultivate joy, mindfulness, and gratitude in a plant-based kitchen. She is a graduate from The Culinary Institute of America with a degree in Baking and Pastry, and The School of Hotel Administration from Cornell University. During her time at Cornell, she studied Zen Buddhism and that sparked her interest and passion in veganism, mindfulness, and meditation.
