In this class, students will learn how to make a favorite Asian-style snack to satisfy summer cravings. Using mostly raw ingredients means we get to enjoy this warm weather without the hassle of turning on the oven to cook. Because these rolls are plant-based (vegan), everyone can enjoy them! 

Ingredients Needed:
- Rice paper wrappers
- Vegetables of choice (choose 2 or 3) - bell peppers, red cabbage, carrots, cucumber, romaine lettuce, radish
- mint, thai basil, or cilantro (optional)
- dried vermicelli rice noodles
- sugar
- water
- rice vinegar or white vinegar
- soy sauce, tamari, or liquid aminos
- 2 fresh limes
- salt
- 1 garlic clove
- 1 jalapeño or thai chile

Equipment Needed:
- cutting board
- knife
- mandolin (optional)
- medium bowl
- cotton kitchen towel (make sure no fuzzy stuff will stick to your rice paper)
- bowl or large plate that fits your rice paper wrappers completely


This class is appropriate for ages 16+.

About the teacher:
Ali is the founder and owner of Spirit and Abundance, a company that seeks to help people connect and cultivate joy, mindfulness, and gratitude in a plant-based kitchen. She is a graduate from The Culinary Institute of America with a degree in Baking and Pastry, and The School of Hotel Administration from Cornell University. During her time at Cornell, she studied Zen Buddhism and that sparked her interest and passion in veganism, mindfulness, and meditation.
