Corn! A delicious and versatile ingredient, corn is used in many Latin American foods. This class will focus on two very popular ways to use cornmeal and corn flour. Each student will make their own tortillas and pupusas, which is a stuffed and fried tortilla. Make sure to get your favorite taco ingredients together to use your tortillas right after class!

Ingredients Needed:
- 2 c. masa (masa harina or harina de maiz) - Maseca and Masa Brosa are both great brands
- 2 c. tap water
- 2 c. (or more!) cheese of your choice (for pupusas)
- oil for frying (canola, corn, or vegetable)
- your favorite taco ingredients to use in your tortillas

Equipment Needed:
- large bowl for mixing
- spoon for mixing
- spatula or tongs
- liquid measuring cup
- large flat frying pan or griddle


This class is appropriate for ages 14+.

About the teacher:
Christin Ortiz has been working in restaurants since she was 19. Starting in the front of the house, she realized early on she preferred the back of the house. Having worked in different kitchens, she is most proficient in Italian and Hispanic cuisine. Most recently Christin ran the food program at Joe Bean Roastery, where she focused the menu on her Latin-American heritage. She loves sharing her passion for food, and wants everyone to be able to cook the food they crave!
