Thursday, March 24th | 7:00pm-8:15pm | Wine and Cheese Pairings 101


Is there a better duo than wine and cheese? In this class, Dr. Smoller will be joined by cheesemonger Robin Sullivan as they establish pairing guidelines using a series of examples to show how certain pairings enhance the qualities of each side. A list of cheeses that will be discussed and wines for pairing are listed below to enable audience participation and cheese and wine tasting during class. 

Cheeses to be discussed:
1. Humboldt Fog (substitutions: Valencay, Bucheron, Purple Haze, any Montrachet goat cheese)
2. Delice de Bourgogne (substitutions: Brillat Savarin, Pierre Robert, Moser Screamer,  La Tur, or any other cow’s milk bloomy rind triple cream)
3. Winnimere (substitutions: Oma, Hooligan, Epoisses, Rush Creek Reserve, or any other washed rind cow’s milk cheese)
4. Artikaas 5 year aged Gouda (substitutions: Jake’s Gouda, Prima Donna, or any other aged cow’s milk Gouda)
5. Rogue Creamery Smokey Blue (substitutions: St Agur, Roquefort, Maytag, or any other creamy blue cheese)

Wines to be discussed:
1. Sauvignon Blanc
2. Pouilly-Fuisse Chardonnay
3. Viognier
4. Cabernet Sauvignon
5. Syrah

Please note: While not required, participants are invited to crack open one or more of the recommended wines that will be discussed in class. They are available, amongst other places, at Pinnacle Liquor on Monroe Avenue in Brighton. Please follow this link for a list of recommended wines. If the exact wine is out of stock, Pinnacle will have a similar option available that will not affect your ability to participate in class discussion. Feel free to buy all 5 wines or just sample a few as we move forward with the tasting. Attendees must be 21+ to participate in tasting.

This class is appropriate for ages 21+.

About the teacher:
Bruce Smoller began his exploration of wine many years ago, when he lived close to Napa Valley. His serious study began in earnest when he moved to Rochester seven years ago. Bruce enrolled in the Wine and Spirits Educational Trust program of wine sciences and is currently working through level 4 (diploma) of the series. He has diversified his wine studies, completing French Wine Scholar, Italian Wine Scholar and Spanish Wine Expert exams, along with Master level courses in the wines of Bordeaux, Burgundy, Alsace, Rhone Valley, Loire Valley, and Rioja. Along the way, Bruce has also completed courses in fine wines of Napa Valley, Oregon, Australia, New Zealand, South African, Portugal, Argentina, Champagne and Switzerland. He otherwise spends his time working as a Professor at the University of Rochester School of Medicine and Dentistry where he serves as the Chair of the Department of Pathology and Laboratory Medicine.
